For many years, the mainstream view of a gluten-free diet remained black or white: It’s a must if you have celiac disease and if you don’t, there’s no need to avoid gluten.

Metabolic Meals: In conversations with us, Kirk said that early in his career he was eating foods that are often touted as being healthy. Tiffany H., described herself as a “carb queen” through her mid 20’s.
