Enjoy Brussels Sprouts! These mini cabbage looking vegetables are a rich sources dietary fiber, vitamins, minerals, and antioxidants. Just a hint of brown grass-fed butter adds an abundance of flavor when mixed with the olive oil and fresh lemon!

Roasted Brussels Sprouts Ingredients (2 servings)

  • ½ lb Brussels sprouts
  • 1 tablespoon grated Parmesan
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon salted grass-fed butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation

  • Preheat oven to 450 degrees.
  • Remove the steam from Brussels sprouts.
  • Cut the Brussels sprouts in half.
  • Toss the sprouts in the tablespoon of olive oil and place in a cast iron dish, then place in the hot oven for 8 minutes.
  • Remove the sprouts and add the Parmesan, lemon juice, and grass-fed butter.
  • Season with salt and black pepper.
  • Place back in the oven for 4 more minutes.
  • Remove and serve immediately.
