Blood Orange and Almond Panna Cotta with Raspberry Blood Orange Compote

Panna Cotta is a classic Italian egg-less custard. This silky smooth twist on the traditional version will leave your skin glowing and your joints, muscles, nails and hair stronger as well. Gelatin from pasture-raised cows is the agent that firms up this dessert. It is also extremely beneficial for all  of your connective tissues. So get all of your essential amino acids in the form of a delicious after-dinner treat.

ingredients

Panna Cotta Ingredients

  • 2 cups full fat organic coconut milk
  • 1/8 tsp pure almond extract
  • Zest from one organic blood orange
  • 1 TB gelatin powder (derived from pasture-raised beef)

Compote Ingredients

  • Juice from one blood orange
  • 1/4 cup raspberries

Panna Cotta Preparation

1. In a medium saucepan, heat the coconut milk, almond extract and orange zest.

2. Just before it starts to simmer, slowly whisk in the gelatin until it’s completely dissolved.

3. Pour into individual pans and chill for 2-3 hours or until completely set.

Compote Preparation

Blend until pureed and serve over panna cotta with raspberries and toasted sliced almonds.
