Brussels Sprout Slaw with Slivered Almond, Goji Berries and Honey Cider Vinaigrette

Whip up this quick and healthy side as an accompaniment to any light lunch, sandwich, or as a stand-alone dish. Brussels sprouts, almonds, and Goji berries provide texture to this nutritional powerhouse dish. The slightly sweet and sour dressing compliments without overpowering this healthful blend.

Ingredients  

  • ½ pound organic Brussels sprouts
  • 1 tablespoon chopped organic cilantro
  • ½ fresh organic jalapeno
  • ¼ cup red onion, chopped
  • 1 tablespoon slivered almonds
  • 1 tablespoon organic goji berries

Preparation

  1. Place these ingredients (except almonds and goji berries) in a food processor and pulse until shredded.
  2. Empty ingredients into a mixing bowl and add the almonds and goji berries.

Honey Cider Vinaigrette

Vin-Ingredients

Ingredients

  • 1 oz cold-pressed olive oil
  • 1 tablespoon raw honey
  • 1 teaspoon apple cider vinegar

Vin-Prep

Preparation

  1. Place ingredients in a blender until emulsified.
  2. Pour over the slaw mix and blend well.
  3. Season with sea salt and pepper to taste.
