To make this gluten-free version, our chefs marinate grass-fed beef of the highest quality overnight in a rub of aromatic Italian seasonings. In the morning, the beef goes into the oven for slow roasting until it’s the perfect shreddable consistency. The beef is then simmered in a blend of dry chardonnay, beef stock, minced garlic, and pickled giardiniera for a complex depth of flavor you won’t find outside of Chicago. A side of fresh kale and bell peppers sautéed in cold-pressed olive oil and simmered in marinara sauce completes this reimagined Windy City classic.
