Chocolate Mountain Meringues

These chocolate mountain tops get their name from the whipped egg whites that resemble a snow covered peak. Sweetened with just enough Monk Fruit sweetener, and dipped with bittersweet chocolate, these tasty treats will leave you feeling on cloud nine! The almond and toasted coconut are a perfect complement to these meringues.

Note to file: Monk Fruit sweetener is nearly 200 times sweeter than sugar, although it contains zero calories or carbohydrates.

Ingredients (Serves 4)

  • 2 free-range egg whites, room temperature
  • 1 tbsp organic monk fruit sweetener
  • 1/2 tsp organic almond extract
  • 1/2 cup organic dark chocolate
  • 1/4 cup organic toasted shredded coconut

Preparation

1. Heat oven to 350 degrees and line a baking sheet with parchment paper.

2. Beat egg whites on high speed until foamy. Slowly add monk fruit sweetener and beat until soft peaks appear.

3. Scoop mixture into a medium sized ziplock bag and snip one corner. Close the bag and gently squeeze out the meringues into small spiral shapes onto the parchment paper.

4. Place in oven and immediately turn oven off. After two hours, meringues should be firm.

5. Melt chocolate in a microwave-safe bowl. With a small spoon, drizzle chocolate over meringues and sprinkle immediately with toasted coconut.

6. Let chocolate set and enjoy.
