Freshly harvested eggplant, zucchini, bell peppers, onions and vine ripened tomatoes are roasted to create a rich caramelized flavor. After roasting this potpourri of farm-fresh vegetables just enough to char the outside, they are then hand-chopped so that each piece can be lightly dressed with our made-from-scratch vinaigrette. Blending Mediterranean spices like paprika and cumin and fresh herbs like mint and cilantro, with cold-pressed olive oil and tangy lime juice, our chefs created the perfect sauce to bring out the natural flavors in these roasted vegetables.
