Grilled Grass-Fed Lamb Burger with Roasted Garlic, Aged Goat Gouda, Sliced Cucumbers, Roasted Red Pepper & Pickled Red Onions

Grass-Fed lamb meat is an excellent source of high quality protein, healthy fats, iron, zinc, calcium and phosphorus.  This tender burger is topped with the perfect flavor and color combinations of aged goat gouda, paper-thin cucumbers, and pickled red onions.

Grilled Grass-Fed Lamb Burger Ingredients (4 burgers)

  • 1 ½ # grass-fed ground lamb
  • 1 clove elephant garlic (roasted until soft, then mashed)
  • 1 dried red chili, crushed
  • ½ cup shredded aged goat gouda
  • 2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 4 thick slices of aged goat gouda
  • ½ medium cucumber, sliced paper thin
  • 1 red bell pepper, (charred and skinned and cut into four large sections)
  • ¼ cup pickled red onion (see recipe below)

Preparation

  • Place the ground grass-fed lamb in a mixing bowl and add the garlic, red chili, shredded gouda, sea salt and pepper.
  • Preheat grill.
  • Divide the mixture into four thick patties.
  • Grill the grass-fed lamb patties to desired temperature, then melt the cheese on top.
  • Garnish with sliced cucumbers, roasted red pepper, and pickled red onions.

Pickled Red Onions

  • Slice a medium red onion in half then slice in circles.
  • Place the onion in a small sauce pot and cover with cider vinegar.
  • Add 2 tablepoons sugar and 1 teaspoon of sea salt.
  • Simmer until the liquid is almost evaporated.
  • Allow to cool and use as garnish when ready.
