Instant Pot Steamed Artichokes with Honey-Lemon Dipping Sauce

Did you know that artichokes are one of the top sources of antioxidants? This Instant Pot recipe for steamed artichokes makes it quick and easy to take advantage of all the health benefits this super vegetable has to offer! The dipping sauce combines heart-healthy fats with the tangy flavors of lemon and garlic to make this an irresistible appetizer or healthy snack.

Ingredients

  • 4 organic artichokes
  • 1 cup avocado-oil mayo
  • juice from 1 organic lemon
  • 2 tsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp honey

Preparation

1. Prepare the artichokes. Begin by peeling off the bottom layer of petals. With a kitchen shears, cut the tips off the first 2-3 rows of petals from the bottom. Finish by cutting off the top 1 1/2 inch of the artichoke with a sharp knife. If you’re not cooking immediately, rub the cut edges of the artichoke with lemon to prevent browning.

2. Place the artichokes top down in Instant Pot with one cup of water. Cook on manual setting for 10 minutes.

3. While the artichokes are steaming, prepare the sauce. Combine mayo, juice from the lemon, vinegar, garlic powder and honey.

4. When artichokes are finished cooking, enjoy immediately. Peel off each petal and start dipping!
