Crab meat offers a lean source of protein and more than a dozen essential vitamins and minerals. It is particularly rich in vitamin B-12 which, along with the other B vitamins, helps to convert food into energy. In addition, crab meat also provides a healthy serving of phosphorus, essential to strong bones, and selenium, which acts as an antioxidant and helps with thyroid function and immunity.

The aioli, prepared with olive oil mayonnaise, pumps your heart with healthy fat and the freshly squeezed Meyer lemon provides a perfect balance of sweet and sour to the delicate flavor of crab.

Jumbo Lump Crab Cake Ingredients

  • 4 oz wild-caught jumbo lump crab
  • 1 tablespoon organic, olive oil mayonnaise
  • 1 teaspoon Worcestershire Sauce (soy free)
  • ½ teaspoon Dijon mustard
  • 2 tablespoons fresh squeezed organic Meyer lemon juice
  • 1 tablespoon gluten-free panko bread crumbs
  • Sea salt and pepper to taste

Crab Cake Preparation

  1. Gently place the jumbo crab meat in a bowl (be gentle not to pulverize the delicate crab)
  2. Separately, mix together the mayonnaise, Worcestershire, mustard, lemon juice, and sea salt/pepper.
  3. Gently fold the crab meat into this mixture until just incorporated.
  4. Split the mixture into two separate round molds (about 3″ in diameter) (spray the inside of the molds with non-stick coating).
  5. Sprinkle the gluten-free panko over the top of both crab cakes.
  6. Heat a non-stick (or cast-iron) pan with a little olive oil over medium heat.
  7. Gently lay the crab cakes in the pan (keep them in the mold) and saute until lightly golden brown.
  8. Flip them over and repeat until lightly golden brown.
  9. Place crab cakes on a serving plate, remove the mold, and serve with a dollop of the aioli.
  10. Enjoy immediately.

Aioli Ingredients And Prep

  • 1 tablespoon organic olive oil mayonnaise
  • 1 tablespoon fresh squeezed organic Meyer lemon juice
  • ½ table spoon minced chives
  • Sea salt and pepper to taste
  • Mix all ingredients together until smooth and refrigerate until ready to serve.
