Watermelon Mango Gazpacho with Crumbled Goat Cheese and Dill

Tomatoes, watermelon, and mango provide a trifecta of powerful antioxidants, and a smorgasbord or vitamins and minerals. A chilled out bowl of this flavorful gazpacho will beat down the dog days of summer too!

Tomatoes are an abundant source of antioxidants, especially a large amount of lycopene, an antioxidant that is highly effective in scavenging cancer causing free radicals.

Watermelon offers a long list of healthy and because of its vitamins, minerals, and organic compounds. These include significant amounts of vitamin C, calcium, magnesium, fiber, protein, and a very large amount of potassium. Furthermore, they contain vitamin A, B6, niacin, thiamin, and a wide variety of carotenoids and phytonutrients, including lycopene!

Mangos are rich in minerals like potassium, magnesium and copper and they are one of the best sources of quercetin, betacarotene, and astragalin. These powerful antioxidants have the power to neutralize free radicals throughout the body. Ailments like heart disease, premature aging, cancer and degenerative diseases are due to these free radicals that damage the cells.

Watermelon Mango Gazpacho Ingredients (Serves 2)

  • 2 large tomatoes diced
  • 2 cups diced watermelon
  • 1/2 cup diced red onion
  • 1 green onion diced
  • 1 teaspoon fresh dill chopped
  • 1/4 cup fresh cilantro chopped
  • 1 Serrano pepper minced
  • 1 clove garlic minced
  • 1/2 English cucumber, peeled and seeded, then diced
  • 1/2 ripe mango, peeled and diced (set aside)
  • 1/4 cup goat cheese crumbles
  • Salt and black pepper to taste

Preparation

  1. In a non-metallic mixing bowl, add all ingredients, except for the mango and goat cheese crumbles. Toss them well.
  2. Remove 1/2 the contents and purée in a blender.
  3. Add the purée back into the mixing bowl.
  4. Add the mango.
  5. Check seasoning and adjust accordingly.
  6. When ready to serve, pour the gazpacho into a bowl and garnish the center with 1-2 tablespoons of goat cheese crumbles and a sprig of fresh dill.

Note: For best flavor, allow the gazpacho to sit overnight in the fridge. Then repeat the garnish steps when you’re ready to serve.
